Production and Inventory Problem

I am attempting to building an Access database for production and inventory of a refinery. I need to pull data from different fields in different tables, perform calculations on some data and display it on a daily report. I am having trouble building a query that calculates the required fields for a specific date. Does anyone have any ideas how I can accomplish this?

It is key to get your tables and relationships set up properly before getting too hung up on queries.
