By bevel do you mean rounded corners? They'll become square corners if you set "Use Theme" to False.

changing the back color will reset the bevel formatting - just as adding a shadow will reset the border width. Having changed the colour, just reselect bevel

that's all you get in the properties, if you want bevels etc, use the options on the ribbon per Davegri's post
