Lookup wizard changes data type from text to Number

Can anybody explain why does Lookup wizard changes the data type of field from Short text to Number.

You're setting up a multi-value field. The lookup wizard is using the table's primary key behind the scene to establish the many-to-many junction table and relationships.
If you want to keep the field as text, you can force the wizard to do that by eliminating the primary key in the lookup table before establishing the lookup.
But, like June7 says, it's best to not use lookups at the table level.
