Logging and tracking in access

I would like to program an logging and tracking function inside access. Let me summarize, I would like to monitor one data field in one table. Access should just write into a external file or extra table, which user at which time used the field and saved data.

Would be very helpful if some of you could give me some advises for solving this issue.
