I have a multi-page table listing my collection of old pocket knives. I want to size it so I can print it out on 8 1/2 X 14 paper, i.e. about 12 1/2 inches wide. I can't figure out how to set the width.

Not really sure I understand issue. Manually drag table or query edges and columns to the desired widths.
Best would be to build a report.

Maybe I'm using the wrong terms. I have a couple of hundred rows and 7 columns. How do I make sure the total of 7 columns is 12 1/2" wide? Do I just print it, adjust column widths, print it again, adjust again, until it fits on the page? There must be a setting somewhere where I can specify that this report will be exactly 12 1/2" wide like specifying page dimensions in Word.

Report in design view, look at Page Setup tab on ribbon.
If you are printing a table or query, then yes, trial and error.

I've figured out how to set the size of the document. I tried printing a sample but can only print 6 of the fields. #7 won't print even though there seems to be enough space on the paper. Ideas?

Are you printing a report? Does it print on a second page? Need to adjust margin settings? Resize textboxes?
Would have to review report design. If you want to provide db for analysis, follow instructions at bottom of my post.
