Can I get rid of those stupid little pictures on buttons that launch Forms, Queries?

It seems like I can't create a button that launches another database object without it forcing a picture into the button. It calls the text in the button a 'Caption', but that's all I want on the button!

Is there a way to show these types of buttons without the picture?

How are you creating the buttons?
Unless something changed drastically from 2007 to 2010, if you use the Command Button Wizard, on the second tab, there is the option to show Text or a Picture on the button. I think you want to choose "Text" here.
