    Prompt for a table.

How do I setup a query where the first prompt is for the user to specify which table to run the query on?
To allow this to work, do all the various tables have to be included in the build of the query itself?

Please provide more info. Normally with a query you know what tables, or other queries, are involved. The general Access query wizard allows you to select the table(s) or queries involved and how they are related.
What is it are you want to accomplish?
