I'll give the second answer first. In MS Access 2010, SQL view is reached by looking at the query in design view, then on the query tools/design tab of the ribbon, the far left group (results) controls the view format - drop down and select SQL.
The first answer is a little more complicated. There's a documenter feature, which I find cumbersome, and there's some VBA code that will pull the information from a system table.
