I have no idea why these controls show as text vice Checkbox.
You can however delete the Controls that are showing as Text, add Checkbox Controls from the Ribbon and then Bind the checkbox to the table name.

These are form fields/controls or table fields? You're comparing what to what exactly? AFAIK, how it looks on a form depends on which control you use - textbox for Yes/No or True/False or On/Off as words. However, the table will always show a checkbox.Why is it some of my Yes/No Field are checkboxes and other come up as the text?
