Access Data Subset - database model

I have Customers where i have all data and part of all data for specific customers.

So All Customers data will be for example
    Operating Systems: Windows, Linux Ubuntu

but Customer 1 will have only Linux.

How to create proper model for this?

I created in table Customers two records:
All Customers (set with all data)
and Customer 1 (part of it),

my boss wants to ghet mechanism for changing data easily.
Where you change data in All Customers also Customer1 data should be changed.

I think that this should not be problem because for data mainly i am using junction table like in screen attached:

But this is working like this:
when user changes data in main set of data (all data) there will be not change within customer1 records.
I can do it via changing all tables data related to junction table.

    What you think?
    My approach is good here?

    thank you Guys for helping,
    Best,
    Jacek
