Possibly Access is proofing the text entries - Correct As You Type feature.
The intrinsic AutoCorrect has listings for converting some text combinations to symbols. I have deleted them from my Access install and have to do this for every user. Or turn off AutoCorrect.
File > Options > Proofing

No, "@" is not in the replace list.
Wait, you said 'format entry' - did you mean Format property? I misread post and was thinking of text values.
Is Format property set for field in table?

Sorry it is the Format Property that is changing on its own, as far as I know. When I set up the table I did not specify a Format Property leaving it empty.
Then no idea why textboxes would adopt this Format setting. If you want to provide db for analysis, follow instructions at bottom of my post.
