What is the purpose or the advantage to doing more than one join between two tables? How many joins can you have between two tables?

Are you talking about composite keys? Join as many fields as it takes to define unique identifier. Not sure if there is a maximum - other than 255 because can't have more than 255 fields in table or query.

Here's a comment, but I'm not sure it deals with what you are asking.
I'm not a big fan of composite PKs, especially when you will need to join with other tables.
I prefer single field surrogate PK and then unique, composite index on those fields to prevent duplicates.
